Zucchini cream soup

4 Portions:


  • 1.5 kg Zucchini
  • 4 big potatoes
  • 3 Spoon of vegetable stock
  • 100 ml cream
  • 2 pieces of garlic
  • Salt and pepper
  • Petersilie
  • A little butter

  1. Cut zucchini and potato into small pieces
  2. Heat a spoon of butter in a pot
  3. Add in the order: garlic, potato, salt peper, zucchini, petersilie
  4. Fry the ingredients until half-done
  5. Add vegetable stock and 600ml water
  6. Heat until the soup boils
  7. When the ingredients are soft, stir with a hand-held mixer
  8. Add 200 ml cream
  9. Heat until boils again 
  10. Ready
